Thank you so much for your instruction, professor. I really enjoyed this course and I learned a lot of exciting science. I had a great time learning more about the human anatomy, how intricate it is, and how the different parts and systems interact with each other. Mechanics who maintain airplanes are familiar with each part and system of the airplanes. Similarly, for those who aspire to become our bodies and health professionals, it is essential to be familiar with each system and function of the human body.

I have not decided on my future career yet. But during I learned about various body structures in this course, I realized that proper diet and nutrition are essential to maintaining every structure and promoting good health. Diet is the basis of health and the best means of preventing all kinds of dysfunctions and diseases and recovering from ailments. I will review the contents I learned about health and related nutrition in this course, and describe how those helped me prepare for the future.

1. Vitamin C and vitamin E suppress oxidative stress
According to the textbook, "Reactive oxygen species (ROS) can cause permanent damage to cellular lipids, proteins, carbohydrates, and nucleic acid" those damages to cellular components are called oxidative stress (OpenStax, 2018, chap.3). These oxidative stresses are caused by natural biological processes we perform every day, such as breathing, digesting and metabolizing food, and converting it into energy. This makes us feel like we can not prevent it, but it is not actually. Many studies show that these oxidative stresses can be suppressed through proper diet. For example, vitamin C, which is abundant in citrus fruits and green-yellow vegetables, and vitamin E, which is abundant in nuts and soybeans, contain various antioxidants that suppress the action of active oxygen (Reilly, n.d.). We can contribute to people's health by developing foods containing them or educating people about the effects of these foods and encouraging them to consume them.

2. Proteins and polyphenols play big roles in maintaining the immune function
The immune system is a complex collection of cells and organs that destroy or neutralize pathogens that cause disease and death (OpenStax, 2018). The function of immunity can be maintained appropriately for proteins that make body cells and immune substances. Therefore, it is important to eat a well-balanced diet of meat, fish, eggs, and soybean products, try to take in high-quality protein, and take in a well-balanced intake of carbohydrates, which are the source of the body's vitality, as well as vegetables and fruits. Moreover, polyphenols are known to enhance the activity of white blood cells (Ding, 2018). We can contribute to people's health by developing foods containing them or educating people about the effects of these foods and encouraging them to consume them.

3. Controlling carbohydrate intake prevents and ameliorates obesity and various diseases
Excess carbohydrates and sugars are converted into glycogen and triglycerides and accumulate as adipose tissue in our organs and blood vessels. Exceed consumption of carbohydrates is regarded as a cause of diseases such as cardiovascular disease, type 2 diabetes, etc. Therefore, it is important to control carbohydrate intake. Slow-releasing carbohydrates are absorbed slowly in our bodies, suppressing the sudden rise in blood sugar levels, and can be expected to maintain satiety and thereby prevent overeating. It is a way to make us feel full and simultaneously prevent us from overeating. Examples of examples are whole-wheat pasta, brown rice, nuts, walnuts, brazil nuts, pecans, green beans, etc. (O'Byrne, n.d.). We can contribute to people's health by developing foods containing them or educating people about the effects of these foods and encouraging them to consume them.

I developed an interest in a food-related career while studying this course. I am sure those I learned in this course are directly connected to my future career.
